Vegan Paleo Sweet Potato Gnocchi

What can I say, I am a perfectionist. I tend to start blogs and never post them because I feel like they just aren’t good enough. Well, that stops today. I vow here and now to start uploading new blogs as often as I can and not worry too much about them being perfect. But enough about me, you are here for the recipe anyway, so let’s get right into it.


For those who don’t know, I am on the Auto-Immune Protocol diet due to an auto-immune disease I have. This means no grains of any kind, no sugar, processed food, and no nightshade vegetables. This means I can’t have potatoes either, so I was very excited to figure out a recipe for gnocchi that I could eat! Personally, I think it is even better than white potato gnocchi.


INGREDIENTS

INSTRUCTIONS

  • Peel sweet potatoes and boil about 10 minutes or until soft

  • Mash sweet potatoes and mix all ingredients in a large bowl

  • Roll out dough into long 1/2 inch wide strips

  • Cut strips into 1 inch long pieces

  • Bring 6 cups water to boil in a medium-size pot

  • Once boiling, drop in the gnocchi, about 10 pieces at a time

  • Remove from water once gnocchi pieces float to the top of the water

  • Fry gnocchi in a lightly oiled skillet until desired crispiness

I like to just season my gnocchi with just thyme and salt, but you can season it with anything you desire. You can even make it into a sweet treat and add some cinnamon and coconut sugar!
